couscous, racines et couleurs d&rsquo;Alg\u00e9rie\u00a0\u00bb de l&rsquo;auteure alg\u00e9rienne, Yasmina Sellam, a d\u00e9croch\u00e9, r\u00e9cemment \u00e0 Lisbonne au Portugal, le premier prix du concours international \u00ab\u00a0Gourmand World Cookbook awards 2025, qui r\u00e9compense les meilleurs livres de cuisine du monde, a indiqu\u00e9 l\u2019Entreprise nationale de communication, d\u2019\u00e9dition et de publicit\u00e9 (ANEP) dans un communiqu\u00e9 .<br>L&rsquo;ouvrage publi\u00e9 en 2024 aux \u00e9ditions Anep, a \u00e9t\u00e9 retenu dans le top 3 des \u0153uvres concurrentes dans la cat\u00e9gorie \u00ab\u00a0Culture culinaire\u00a0\u00bb (Culinary Culture) o\u00f9 des livres de pays r\u00e9put\u00e9s pour leur art culinaire distingu\u00e9, ont \u00e9t\u00e9 s\u00e9lectionn\u00e9s, \u00e0 l&rsquo;instar de la Turquie et le Portugal.<\/p>\n\n\n\n<p>Yasmina Sellam a fait savoir qu&rsquo;il s&rsquo;agit de sa deuxi\u00e8me participation \u00e0 ce concours, apr\u00e8s son premier ouvrage \u00ab\u00a0M\u00e9moire culinaire de l&rsquo;Alg\u00e9rie: Histoire de recettes\u00a0\u00bb (2022), qui avait remport\u00e9 le prix en 2023.<br>Le livre \u00ab\u00a0Le couscous, racines et couleurs d&rsquo;Alg\u00e9rie\u00a0\u00bb, poursuit Mme Sellam, met en lumi\u00e8re \u00ab\u00a0un \u00e9l\u00e9ment cl\u00e9 de l&rsquo;identit\u00e9 culturelle alg\u00e9rienne\u00a0\u00bb, \u00e0 savoir le couscous, ajoutant que \u00ab\u00a0ce plat traditionnel, ancr\u00e9 dans l&rsquo;histoire nationale, incarne une facette de l&rsquo;identit\u00e9 alg\u00e9rienne depuis l&rsquo;antiquit\u00e9\u00a0\u00bb.<br>Le livre retrace l&rsquo;histoire du couscous, l&rsquo;un des plats les plus c\u00e9l\u00e8bres au monde, inscrit en 2020 par l&rsquo;UNESCO dans sa liste repr\u00e9sentative du patrimoine culturel immat\u00e9riel de l&rsquo;humanit\u00e9, au nom de l&rsquo;Alg\u00e9rie et trois autres pays du Maghreb, a-t-elle expliqu\u00e9, soutenant qu&rsquo;il explore ses origines, ses vari\u00e9t\u00e9s, les ingr\u00e9dients et la m\u00e9thode de sa pr\u00e9paration, ainsi que des recettes embl\u00e9matiques.<br>Ing\u00e9nieure agronome de formation, Yasmina Sellam s&rsquo;int\u00e9resse au patrimoine culinaire, avec l&rsquo;objectif de faire conna\u00eetre la cuisine traditionnelle alg\u00e9rienne \u00e0 travers les publications et les \u00e9missions t\u00e9l\u00e9vis\u00e9es.<br>\u00ab\u00a0Gourmand World Cookbook awards\u00a0\u00bb a \u00e9t\u00e9 institu\u00e9 en 1995 et
